Salmon Tacos with Ricotta and Avocado Cream

P1000595 copyLast week Tim and I had the most delicious meal. He made blackened salmon and I made a cream that perfectly complimented the flavors of the fish. We put it in a flour tortilla with a little cilantro and then we ate every bite because it was so good. This will definitely be a frequent summertime supper at our house. It was so quick and easy.

The cream was a result of last minute thinking and whatever we had in the fridge and holy cow it was yum. I was originally going to make creme fraiche but I’d never made it before and didn’t realize that it needed a million (12-16) hours to set and I only had 30 minutes. Oops! The recipe makes about 6 tacos so this was two meals for both of us.

Here is the recipe!

Makes six tacos

Ingredients:

4 fillets of Wild caught salmon

Blackened cajun seasoning (we used whole foods brand)

1 TB raw butter, grass-fed butter or coconut oil

6 flour tortillas

Cilantro

For the cream:

1 avocado peeled and cubed

1/2 cup of ricotta cheese

1 TB of cilantro

1 TB lemon juice

Instructions:

Sprinkle the salmon with blackened cajun seasoning. Cook salmon in the butter or oil in a preheated skillet on medium high heat for about 6 minutes on each side.

While the salmon is cooking, put the ingredients for the cream into a food processor and blend until creamy.

Place salmon in a warm tortilla with a dollop of the cream, or two, and sprinkle with fresh cilantro.

Tim warmed the tortillas by putting a little more butter in the skillet and frying on both sides for a minute. This was delicious because they were a little crunchy but he has an awesome metabolism and I don’t so there’s that.

Let me know if you make this! You won’t be sorry.

The Dream Easter Basket

Growing up, every Easter morning before church my mom would have us look for our Easter baskets she had hidden around the house. Mine was usually in the oven so that was the first place I’d look. The basket was filled with starburst jellybeans (YUM) and chocolate and sweet little gifts. Such a fun tradition because guess what, I LOVE GIFTS. I love to receive gifts and I love to give them.

Well I’m all grown up and married now so I don’t expect a visit from the Easter bunny until we have kids of our own. But a gal can dream and if the Easter Bunny was real (and rich), here’s what I’d hope he would bring me.

Organic jelly beans! They have these ones at Whole Foods:

This nail polish is so cute! Definitely a great spring color! I love all of the essie colors at Target.

Screen Shot 2014-04-11 at 11.56.58 AMThis phone case. If I could time travel I would go back in time to when I bought my phone case so I could buy this one instead. It’s so gorgeous and you can actually see the pretty gold iphone!

I was just at the MAC store today and saw this palette. Those colors will be so beautiful this summer!! I will have to save my money for this one :) Screen Shot 2014-04-11 at 12.20.07 PM  I absolutely love these new lip pencils from MAC. I haven’t been able to choose which color I want but I have tried a few on and they’re great. They’re sort of a cross between lipstick and lipgloss. Must have!Screen Shot 2014-04-11 at 12.34.45 PM

What would be in your dream Easter basket?

Mule Day

If you’ve never been to Columbia, Tennessee for Mule Day, you’re missing out. It’s actually not just one day, it’s seven. But we just went to one, we picked the day with the parade of course. Mules and horses as far as the eye could see, it was the best parade I’d ever seen. Then we headed over to the park where all the action was. I say we headed there but what I really meant was, we sat in traffic for an hour because everyone else who was at the parade was also headed toward the action. But it was just fine. The weather was nice and I was with two of my favorite men, my husband and my pappy and my favorite three year old, Eva. I also had the joy of taking Eva to her first port-a-potty. She thought it was “magic” that we didn’t have to flush. Oh to see the world through a child’s eyes.

Anyway.

Pappy said he’d been wanting to go to Mule Day for 35 years. So finally the stars aligned and he was down here the same weekend and Tim and I had the high honor of accompanying him to his first Mule Day. And it was the best day. We watched the mule show and the mule pull where we saw mules try to pull 5,000 pounds! Then we ate all the terrible fair food. Eva had cotton candy, a corn dog, french fries and ice cream. Sorry Brittany!

P1000588

Oh hey mules, don’t mind us.

P1000583

Eva wasn’t scared and pet all of the animals. She’s just like her Di Di.

P1000543-Recovered

It’s a little teeny tiny mule!

P1000549-Recovered

If you’re ever looking for Tim and Eva, they’re probably climbing a fence somewhere. They were watching the mule show.

P1000560-Recovered

These two love each other! So sweet.

It was such a wonderful day and a wonderful memory! Can’t wait for next year’s Mule Day!

Vampires and Cool Things From the Internet.

Tim in his sleep last night (approximately 1:00 AM):

“OH! Vampires! Yes, vampires. That makes sense. Doesn’t it? Doesn’t it?!”

I am convinced that he is solving mysteries every night in his sleep, he typically says “that makes sense” after shouting something random like “Rubberbands! Yes that makes sense.”

Which is the irony because it never makes sense to me. The wife. Sleeping soundly. Until my husband scares me to death in the middle of the night. I swear I won’t know when a real emergency is happening because of the number of times he has woken me up in a panic.

I love him.

Okay so now onto my favorite things from the internet this week:

1. Kristen Bell is amazing.

2. There is an awesome site that launched this week called gener.us. Its going to change the world. Congratulations Paul on launching!

3. I will soon be baking “next level” cookies. I ordered a horse cookie cutter and a unicorn cookie cutter.

They came in the mail yesterday and the unicorn was BROKEN. It was very upsetting. This morning I asked Tim if he was going to email the unicorn people and he started laughing hysterically. I still don’t know what was funny.

4. I love this article from Dr. Oz about the benefits of coconut oil.

5. I’m buying this coffee mug today. Because Lord knows I need more of those.

What are your plans for the weekend? I plan on watching Beauty and the Beast at least once and dying some Easter eggs.

XOXO,

Di

Coconut Oil and Butter in my coffee?

I’m currently drinking one of the best cups of coffee I’ve ever had. Seriously. It has totally made my morning even better! And what did I do? I added 1 tablespoon of coconut oil, 1 teaspoon of raw butter and 1/4 teaspoon of vanilla! I poured two cups of brewed coffee into my blendtec blender and added all of the other ingredients and blended on high for 20 seconds. Voila! Best. Morning. Ever.

I got the recipe here: http://wellnessmama.com/5673/the-only-way-i-drink-coffee/

You should definitely try it.

Mint Iced Tea Recipe!

In honor of the first day of April and the beautiful weather and sunshine, I decided to share a refreshing favorite of mine and it’s so easy to make! I like to brew up this tea whenever I have a craving for Coke. It’s just a little sweet, a little minty and a lot delicious. :)

This is all you need:

P1000523

8 Black tea bags

1  Spearmint tea bag, or two! You can also use peppermint tea but spearmint is more subtle and refreshing if you ask me.

I use Plantation Mint

And then a little something sweet. I used a tablespoon of raw honey. But stevia is good too. Or add sugar if you’re feeling a little crazy. It’s your life.

Start by bringing two cups of water to a rapid boil in a small saucepan.

Remove from heat.

Add all of the the tea bags.

Let steep for 5-6 minutes.

Remove tea bags and pour tea into a large glass container.

Add sweetener of your choice while it’s still hot.

Then add 6 more cups of water (room temperature is best) and allow to cool.
Pour it over some ice and grab a cute straw and you’ll forget that coke even exists.

And you’ll forget that winter was just a few weeks ago.

What are some of your favorite summer refreshers?

Makeup Tip Monday: MAC Beauty Balm

Image

This product is a staple in my makeup bag. I put it on every morning after I wash my face. This stuff works as a moisturizer, primer and it’s tinted so you can even just wear it by itself. Most days I don’t wear my liquid foundation and I will just put on the beauty balm and then my studio fix powder. Great coverage and it’s so quick, easy and feels light on my face. It’s such a time saver, you practically gain extra minutes in the morning. It’s liked you time travel! If only I could time travel back far enough to the moment I over-tweezed my eyebrows in high school.

I have only tried one other “BB” cream and I didn’t like it one bit. It felt really thick and oily. It was Lancome. I don’t recommend it.

Has anyone tried any “BB” creams that the drugstore or Target has to offer?

XOXO,

Di

Recent Target Favorites!

I don’t know about you gals but my weekend almost always includes a trip to Target. Weekends at my house also include about 32 cups of coffee, but who’s counting. I start the coffee maker around 8 a.m. on Saturday morning and the party don’t stop until Sunday at 4:30. Because 4:30 is my official caffeine cutoff time.

Anyway. Back to the real topic here. Coffee creamer. Just kidding. I know it’s Target but I also must add that my favorite coffee mug is actually from Target.

(I use organic half and half.)

Lately I have found some seriously adorable, useful, in-the-budget things at Target. Mayhaps my favorite thing…these notebooks. They’re Rifle Paper Co. brand!

Screen Shot 2014-03-28 at 8.21.36 AM

http://www.target.com/p/gifts-botanical-notebooks/-/A-14772675#prodSlot=medium_4_48

This is actually a pack of three so I have one for work, one for blog ideas and one for whatever I want! Maybe I’ll turn it into an autograph book in case I have any celebrity encounters! I don’t know! It’s for whatever I want!

You can’t get them online but they are in the store in that new gift aisle next to the greeting cards.

Also, how adorable is this camouflage sweatshirt!? I actually got this on the clearance rack for $8! It’s perfect for the girl on the go. Wear it to brunch and then you’ll be ready for your afternoon hunting excursion! I’ve always wanted to go hunting. My dad and brother wouldn’t let me go with them because I “talk too much” and apparently that scares away the animals. Whatever. It’s fine. They’re not invited to brunch because they “don’t talk enough”.

Tim and I got to the beach last week and realized we had no beach towels! Darn! I guess we have to go to Target! I said. I love this one:

I also snagged some of these makeup remover towelettes. They smell like pineapple. Yum!

And, last but not least, my leopard print flats! I love them and wear them with everything, even other leopard prints because in addition to talking too much I’m also tacky. Don’t I sound like someone you’d like to be friends with?

And also, do you use the Cartwheel app?

You need to know about this if you don’t.

http://cartwheel.target.com

If you download the Target app, there are mobile coupons on there as well. So with mobile coupons, Cartwheel savings, and the 5% you save with your Target debit card, your Target trip is practically free!!! Not really. But you might save like $2 and that is definitely something.

Okay ya’ll, what are some of your recent Target finds?

XOXO

Cookin’ Ain’t Easy

I had a crazy expectation when I got married. I expected that I would find delicious recipes and cook these amazing meals and my husband would love every bite.

Expectations are always setting me up for disappointment.

Why, you ask? It’s not because I’m a bad cook. I mean sure I’ve tried a few new recipes that have failed but I know my way around a kitchen.

Tim is an incredibly healthy eater. I like to be blissfully ignorant about the diet coke and sugar free creamer I drink. We are total opposites in the grocery store aisles.

Tim can eat a raw cucumber for breakfast and think it’s the most delicious meal he’s ever had while I feel like I need a bowl of cereal, a banana, and two cups of coffee to get me through the morning.

This has become such a struggle for me because I never know what to cook for him.

I guess the struggle is that unhealthy habits are hard to break. Tim has read so many books, articles, nutrition labels and really has a grasp on what he should and shouldn’t be putting into his body. While my only guidelines are to not eat a lot of bread or drink pop.

The harsh reality is that we live in a world where the food industry doesn’t have our best interests at heart. Drinks and foods with artificial sweetener (aspartame) becomes formaldehyde when it’s processed in our bodies. This information has honestly stopped me from drinking the amount of coke zero I used to drink. I’m not a doctor and I’m not passionate enough about this to write a three page rant and make everyone stop reading my blog with one post. But my husband is. And he’s smart. And he’s really healthy. And always has a ton of energy and is always happy. I think there’s something to that.

Also, have you read about cows milk lately? If not, you should. The words ‘pus’ and ‘cows blood’ might stand out.

Listen, the purpose of this blog post isn’t to ruffle any feathers. I’m just your everyday, gluten-loving, sugar-eating, don’t-care-if-it’s-organic gal. But I have started a journey of educating myself and being more aware of the chemicals I’m eating. I’m starting to transition into a lifestyle change of eating better. I’ll let you know what changes I see.

What are some shocking things you’ve learned about food?

Carrots and Cucumbers,

Di

Makeup Tip Monday – Cute Lips on the Cheap!

Tim and I just got back from the most wonderful week at the beach. We lounged in the sun, read books, played a million rounds of Phase 10, watched movies and ate delicious food! It was the perfect getaway and we had the best time together.

beach babes

I want to go back!

Anyway. The night before we left we took a trip to Walmart to pick up any last minute things we needed and I found the cutest coral chubby lipstick!

Screen Shot 2014-03-23 at 2.36.28 PM

It’s Flower brand by Drew Barrymore. I got the Coral Floral shade.

I was so pleasantly surprised when I put it on! I had actually meant to run by the MAC counter before I left to grab some coral lipstick because I thought it would look cute with a tan. But I’m so glad I grabbed this instead! It was only $8 and so cute! I wore it to dinner one night and Tim said I looked so pretty :) He’s so sweet.

Here’s a lipstick selfie so you can see it on!

What are some great cosmetics you’ve found for cheap?

Happy Monday!
